Cornmeal is a meal ground from dried maize. It is not ground as fine as wheat or corn flour and so retains more of its nutrients. Although the words ‘polenta’ and ‘cornmeal’ are often used interchangeably, polenta is actually the name of a dish using cornmeal (much like a bread cooked in a saucepan instead of the oven) and not a standalone ingredient.
